This recipe is so so good and beats any store bought granola. Pre-packed food, including granola, tend to contain a lot of added sugars, vegetable oils and other unnecessary ingredients. You can personalise this recipe to your preferences by choosing your favourite toppings and spices. Making granola is so quick and simple and the result is just amazing. You will need
- 1 litre oats
- 1tbsp cinnamon
- 1/2 tbsp cardamom
- 1tsp ginger
- 1 tsp salt
- 1/4 cup maple syrup
- 1/2 cup melted coconut oil
- 1/2 tbsp molasse
- 1 tsp vanilla extract
- 1 cup pecan nuts
- 1/2 cup pumpkin seeds
- 1/2 cup goji berries
- 1/2 cup coconut flakes
- 1/2 crystallised ginger – My favourite part!

What I love about making your own granola is that you can change the recipe to your own liking. Other toppings to try are raw cacao nibs, chia seeds, flax seeds, crushed Brazil nuts, dried fruit e.g. cranberries, sunflower seeds or chopped almonds.
Instructions
- Oven on 180 degrees
- In a large bowl, combine the oats, cinnamon, cardamom, ground ginger, salt and pumpkin seeds. Stir with a large spoon. Add the maple syrup, coconut oil, vanilla extract and molasses and mix with the dry ingredients.
- Pour the mixed granola onto a large oven pan and spread out an even layer to make sure it bakes nicely.
- Keep it in the oven for around 10 minutes, bring out the granola, mix it and add the pecan nuts. Break the pecan nuts slightly to make sure the pieces aren’t too big. I like to take out the granola every 8-10 minutes to give it a quick mix and make sure it bakes evenly without the risk of burning.
- After around 25-30 mins, or when the granola looks golden, take it out of the oven and let it cool down. This is when I add the remaining toppings such as goji berries, coconut flakes and the crystallised ginger.
- Once the granola has cooled down, store it in an airtight container such as a glass jar.
